Hi,

Are you like me and made the most of the heatwave which swept across France and the UK at the weekend? It was far too hot to cook roast diner or anything which meant igniting the oven, so what did you do for dinner?
I made the most of fresh salad with cooked chicken breasts - easy peasey and not a hot plate in sight!
When you make a salad why not try something new - carrot rappee (shredded carrot with a light oil dressing) is a firm favorite in France, along with celeriac rappee (shreaded raw celeriac with a mustard dressing), both easy to prepare and delicious!

Look to add lots of colour to your plate to turn a boring salad into a medely of tasty treats - experiment and try adding sweetcorn (straight from the tin), beetroot, crunchy sliced apple (dipped in the juice of half a lemon so that it doesn't go brown) along with the carrot and celeriac rappee - much more appealing than limp lettuce leaves!

Tip of the day:
Opt for low fat salad dressings so that your salad remains low calorie!
