Monday Medley: Winter Salads


Just because it's winter doesn't mean you can't eat salad! There are lots of winter salads which are packed full of goodness, hearty and warming. Eating a salad for lunch is a great way to stick to your diet plan; just don't go for the recipes which are loaded with cheese or processed meats. Here are 3 of my favourites:

Chickpea Salad:
Chick peas mixed with chilli flakes and mixed with green and yellow peppers is a colourful and nutritious salad with a heart warming kick which is an ideal lunch.

Warm Citrus Salad:
Used as a main course this refreshing salad is the perfect accompaniment for red mullet – add a splash of champagne to make it even more appetising!

Vinaigrette Leeks:
All you need is leeks, Dijon mustard, white wine vinegar and water. Add chopped hard boiled egg so that you include some protein and extra flavour.

Don't lapse on your diet when you can pack it full of winter goodness and colour.
